Meyer lemon
Scientific Name: Citrus Meyeri
Long the favorite of gourmet chefs, the Meyer lemon is particularly sweet compared with its tart cousins, the Eureka and Lisbon lemons (the varieties most commonly found in supermarkets). The complex flavor and aroma contain hints of sweet lime, lemon and mandarin orange.
The tree that bears the Meyer lemon is believed to be a hybrid between Citrus limon, the lemon, and Citrus reticulata, the mandarin orange. This would account for the characteristic sweet and less-acidic taste, rounded orange shape, rich yellow-orange flesh and hint of orange flavor. Meyer lemons are sometimes smaller than a regular lemon with a thin, soft and smooth rind. The rind lacks the typical lemon peel oil aroma, and the pulp is a darker yellow.
Frank Meyer worked as a plant hunter for the U.S. Department of Agriculture, and in 1905 he left the U.S. to explore China. His assignment was to find new varieties unknown to the western world. Meyer was in Peking (Beijing) preparing to return home when he found a curious citrus tree growing as a potted plant in a doorway. In 1908, Meyer introduced these lemons to the United States and they were named after him.
Organic Evaporated Cane Juice
Organic evaporated cane juice is a wholesome alternative to refined sugar and is a natural source of sweetness that can be a part of a healthy diet.
While both sweeteners are made from sugar cane, evaporated cane juice does not undergo the processing that refined sugar does. Therefore, unlike refined sugar, it retains more of the nutrients found in the sugar cane. Since it is considered to be more wholesome, it is also used as a sweetener in a host of natural foods.
It may also be known by a variety of other names including dried cane juice, cane juice crystals, milled cane sugar and direct consumption sugar. In Europe it is known as “unrefined sugar.” Evaporated cane juice is available in a variety of forms that vary in texture and flavor, although they all share the characteristic of being darker in color than white refined sugar.
